Two of my most favorite things

There are two things I love a lot. Can you guess what they maybe looking at this picture?

The first is sweetcorn, I love so much I would be happy to have it in my morning cereal. Summer brings with it lots of fresh corn which I love plainly boiled or bar-b-qued. I used tinned corn for today’s recipe.

Second most favorite thing has to be peanut butter, the crunchy one. I love cooking with it as its so quick and easy and lends flavour and texture to food.

This recipe comes from Gujarat in India and is a common street food, makes a lovely lunch or mid day snack especially in colder climates.

It can be altered to taste. Experiment with it.




Here’s the recipe for

Peanut butter Corn

1 tin sweet corn

1tbspn coconut oil

1 clove garlic (crushed)

1/2 tsp chilli powder

1/2 tsp salt

1/4 tsp tumeric

1/2 tin plum tomatoes

1 (HEAPED) tbspn peanut butter

1/2 glass water



serve with

bombay mix or crushed crisps

Heat coconut oil in a pan, add garlic and cook til golden brown. Add chilli powder and tumeric and cook for a few seconds before adding tomatoes and salt. Let it cook for a few minutes stirring occasionally. Add water and then drained sweet corn. let it cook for a few minutes, add peanut butter and mix thoroughly. Garnish with coriander and bombay mix (or crushed crisps).

It’s ready to eat. Enjoy x
